One of our favorite fast and breakfasts to use up bananas is crepes! While we also love these for dessert, I like to get some fruit, eggs, milk and grains/flour in my family before they head off for their days. Carly Simon sets us in the mood to get out the door and tackle the day, like the Itsy Bitsy Spider!
1 cup flour
½ tsp salt
1 cup milk
½ cup water
1 tsp oil
1 tsp vanilla (or alternative, 1 tsp grated orange zest)
Quart of strawberries
Quart of raspberries
Optional: pineapple chunks, shredded coconut, toasted almonds
Variety of fruit syrups and chocolate sauce
Beat eggs until light and fluffy. Add remaining ingredients:flour, salt, milk, water, oil and vanilla. Beat until smooth. If you have time ,let batter rest for 2 hours. If not, carry on.
Heat a lightly greased frying pan (I like one about 8 inches). Spoon in about ¼ cup of batter and spin the pan so the batter lightly covers the whole pan. Return to heat and brown lightly, flip and brown again. Remove to a platter and keep warm in oven as you finish making other crepes.
When ready, peel and put one whole banana inside a crepe and roll it up.
Then top with whipped cream, syrups, fruit and nuts. Enjoy!
