Time: 30 minutes (prep – 10 minutes night before; 20 minutes baking)

Chocolate and Michael Buble’ for breakfast… definitely food and music for the soul!! In our house, for whatever reason, we seem to wind up with a lot of ripe bananas… this is one of those breakfasts that lets me use up 4 bananas and in a short period of time, have a house smelling of these delicious muffins. Added bonus: Everyone in my family loves these muffins and they stay moist for a few days if kept in a container. They usually don’t last that long as my kids snack on them all day long… making me feel like dancing to Spiderman!
Ingredients:
4 ripe bananas, mashed = 2 cups mashed banana
1/3 cup melted butter
2/3 cup sugar
1 egg
1 tsp vanilla
½ tsp baking soda
1 ½ tsp baking powder
¼ tsp salt
1 ¼ cup flour
¼ cup cocoa powder
1 cup chocolate chips
Dash of cloves – optional, but adds great flavor
Directions:
Preheat oven to 350°F. Spray muffin tin (you can use paper liners, but these muffins are so moist, they will stick to the paper).
In large bowl, mix flour, cocoa, baking soda, baking powder, salt and cloves.
In separate bowl, melt butter in microwave and cool.
In another bowl, mash the bananas and then add in the vanilla and egg. Mix well, then mix in the butter.
Pour wet ingredients into flour and mix. Fold in chocolate chips. Do not overmix. Spoon even amounts into the muffin tin.

Bake until muffins pop back and toothpick test (poke muffin with a toothpick to see if it comes out clean) for about 20-22 minutes. Enjoy and play Spiderman again and again and again.

Breakfast Quick Tip: Mix all of the dry ingredients the night before and leave in bowl. Mix all the moist ingredients the night before in a separate bowl and leave covered in the fridge. In the morning, mix and bake! Gives you a few more minutes to sleep… and dream of Spiderman…
