Shepherd’s Pie Meatballs

“Said the little lamb to the shepherd boy  – ‘Do you hear what I hear’?” I hear meatballs sizzling…  This is one of our new family favorites. This is a very savoury comfort food… meatballs, gravy, mashed potatoes and vegetables. So good, so easy… great for the soul.

Ingredients:

Parmesan Meatball recipe

2 Tbsp butter

2 Tbsp flour

3 cups beef broth

2 Tbsp sherry

1 Tbsp brown sugar

1 cup heavy cream

1 cup onion, diced

2 cloves garlic, minced

1 cup carrot, diced

1/2 cup celery, diced

1/2 cup frozen peas

1/2 cup frozen corn

salt/pepper to taste

6 cups mashed potatoes

Directions:

Make and bake meatballs according to recipe. 

While meatballs are baking, in large skillet, melt butter and saute’ onion, garlic, carrots and celery. When soft, mix in the flour to coat the vegetables well, so there are no clumps of flour.

Add in the beef broth, sherry and brown sugar. Heat to thicken the sauce. Then add in the cream. You may need to mix a bit of water and flour, mixed well and add to the gravy if you like it thicker. Salt/pepper to taste. Then, add in the frozen peas and corn. Let heat for 5 – 10 minutes. 

Take the meatballs out of the oven, and place meatballs in skillet, add all the liquid from the baking pan to the skillet. Heat until gravy is thick.

Serve over hot mashed potatoes with a side of toasted, buttered baguette.
