Enchilada sauce

Time: 20 minutes

Music Selection: Whenever, Wherever

This is a quick and easy enchilada sauce. I like making my own as we play around with the heat. Usually 2 adobe chilis are enough for us, but if you like it hot, add more! The 20 minutes of effort are well worth it… “whenever, wherever, [bcs] we’re meant to be together. I’ll be there and you’ll be near; and that’s the deal, my dear” (with chicken or beef enchiladas)…a great pairing

Ingredients:

1 onion, sliced

2 adobe chilis in sauce, minced

3 large garlic cloves

1 Tbsp ground cumin

1 ½ tsp ground coriander

½ tsp dried oregano

2 Tbsp olive oil

2 cups canned tomato sauce

1 cup water

Salt/pepper

Directions:

In large pot, sauté onions and garlic in olive oil.  Once soft, add spices, water and tomato sauce. Let simmer until thickens.
