My kids LOVE quiche. Not my hubby, but definitely my kids. They especially like it for breakfast. Whenever I make it, they eat any leftovers after school the same day! Quiche can be creative – you can mix in the ingredients you like: bacon, red pepper, green pepper, red onion, etc! We like it simple – brocolli, ham, green onion and dill…. I always think of quiche as an “old classic”, like Charles Trenet and his rendition of La Mer. Timeless…

Ingredients:
3 eggs
¼ cup finely chopped green onion
1 unbaked deep dish pie shell or pie dough (pate brisee)
1 ½ cups heavy cream
1 cup grated Swiss cheese (gruyere)
1 cup steamed and finely chopped broccoli or broccolini
½ cup finely diced ham or cooked bacon
1 Tbsp fresh or dried dill
Salt/pepper
Directions:
Preheat oven to 425 deg F. Mix eggs, cream, salt/pepper, dill together with whisk. Mix in grated cheese, broccoli and ham. Pour into unbaked pie shell. Place in oven on middle rack and back for 40 minutes until eggs are set.
Tip for breakfast: Mix all the ingredients (except pie shell) and place in fridge overnight. Bake in the morning while getting ready for work or making kids’ lunches. Serve with fresh fruit for breakfast/brunch and a light green salad for lunch or dinner!
