Saucy Crockpot Ribs

Time: 15 minutes plus 8 – 10 hours in crockpot (or 1.5 hours in oven)

Music Selection: Pitbull – Celebrate (from Penguins of Madagascar)

“I just want to celebrate”… Who wouldn’t if you have these delicious ribs? This is the easiest crockpot recipe! We actually have had this for breakfast with steaming hot rice (you can add some vegetables right into the rice while it is cooking, like peas and corn — plus if you use chicken broth instead of rice…. mmmmm)

Ingredients:

3 lbs pork spareribs

½ cup brown sugar

½ cup ketchup

½ cup white vinegar or white wine

2 Tbsp Worcestershire sauce

1 tsp chili powder

Dash of paprika

Zest from one lemon or lime

1 onion, diced

1 garlic clove, minced

1 Tbsp dried oregano

1 Tbsp dried basil

¾ cup water

Directions:

Place all ingredients, except spareribs in crock pot or large roasting pan. If using an oven, preheat to 350 deg F.

Add spareribs to crockpot/roasting pan and pour some of the sauce on top. If using an oven, bake with lid for one hour and 30 minutes without the lid. If using a crockpot, bake (covered) on low for 8 – 10 hours.

Serve with cooked rice, pouring sauce on top of ribs and rice. Also, for supper, it is great with a side salad or a trilogy of cooked carrots/green peas and corn niblets (doused in butter). Try it with Creamed Cabbage!

Note: My kids LOVE this for breakfast, I turn the ribs on the night before and we wake up to the smell of delicious ribs. Oddly enough, this is great with a side of sliced oranges! I just make the rice in the morning and I make a lot, as I will use the leftovers for rice pudding later OR for tomorrow morning’s fried rice.
