Dhal

Dhal is a flavourful combination of curries, ginger, garlic, onion…. mmm. Great soul food, combined with soul music. Listen to the intricate play of the strings in this music. You can’t help but move your shoulders all around the kitchen while you mix and stir your dhal… such a wonderful feeling and aroma. Enjoy!

Ingredients
1 ½ cups red lentils, rinsed and drained
1 onion, diced
3 cloves garlic, minced
1 Tbsp cumin
1 tsp garlic
1 tsp ginger
2 Tbsp tomato paste
1 Tbsp ground coriander
1 pinch cayenne
1 cup coconut milk
1 cup water
Chopped cilantro
Salt
Directions:
In large pot, saute’ the onion and cumin in the oil. Add the garlic, ginger, tomato paste, ground coriander, cayenne and water. Then add the lentils. Bring to a boil and slowly add in the coconut milk and salt. Let simmer on low for 15 – 20 minutes, until lentils are cooked. You may need to add more water, if it is too thick. Serve with fresh cilantro and raita. This goes well with the coconut curry rice.
For supper: serve with coconut curry rice, fried chicken and raita.

For breakfast: serve with coconut curry rice, a soft poached egg and raita.
