Raita

Raita is a great cool way to take the heat down if you have made your lentils or curry dishes a bit spicy. In our house, some like it hot, and some not so spicy…. Key to getting the right balance is having raita. We love this very simple recipe. It is delicious with lentils, coconut curry rice or curry beef/chicken. I love this particular musical piece, as the dancing and music are absolutely magical. Trust me — no one is watching — try a few of the dance moves and just start your day off with a free soul full of bliss.

Ingredients:

1 cup diced English cucumber

¾ cup plain Greek yogurt

¼ cup cilantro, chopped

¼ cup green onion, chopped

1 tsp lemon juice

Salt to taste

Directions:

Mix all ingredients in bowl. Keep chilled. Serve with spicy foods, like curry lentils (dhal) or shakshuka.
