Glazed Carrots

Music Selection: Spandau Ballet – True

These glazed carrots are a perfect side- dish. So easy to make, lightly sweetened with a kiss of orange! As well, most kids LOVE these carrots… really, it is True!

Ingredients:

4 large carrots, peeled

3 Tbsp olive oil

salt

2 Tbsp honey

1 tsp grated orange rind

Directions:

Preheat oven to 375 deg F. Line a baking sheet with foil. Cut carrots in half, then cut lengthwise. If large carrots, cut another time lengthwise (you should get 4 – 8 big chunks of carrot).

Lay carrots on foil and sprinkle with olive oil. Roll them in the oil until fully covered. Salt lightly. Place in oven and roast for 15 – 20 minutes, depending on how soft you like them.

In separate small bowl, put honey and warm up in microwave for 30 seconds. Mix in orange rind.

When carrots are done, place on plate and brush with orange infused honey.
