Homemade Turkey Gravy

Gravy and mashed potatoes are a must at our place whenever we have turkey. We like ours homemade and my mom always takes on the task on making it perfect! As it is Christmas, I am pairing it with two tunes for you to enjoy. The first, is the piano guys, who we heard live in Edmonton as a Christmas gift to our daughter – they are truly amazing, just like this gravy! My hubby’s favorite Christmas dish is the mashed potatoes and gravy AND his favorite Christmas song is the Little Drummer Boy by Bing Crosby & David Bowie, so I am pairing them together – Cheers to another year!

Ingredients:

3 cups of turkey liquid from roasting pan (strained)

¼ cup butter

¼ cup flour

1 can whole baby mushrooms (drained)

Salt/pepper to taste

(optional) – use a package of turkey gravy to thicken

Directions

In large pot (or bowl in microwave),  melt butter. Add in the flour and mix well to make a roux.

Slowly add in the turkey liquid from the roasting pan (you can add more water if you have dried turkey meet or skin on the bottom of the pan to loosen it). As we brine our turkey, we have lots of liquid and it tastes like oranges, thyme, rosemary and garlic…. Whisk as you slowly add the liquid. When it thickens, add salt/pepper to taste. Serve with hot mashed potatoes.

Our tradition is to add a can of drained baby mushrooms to half of the gravy – so we have to gravy options for dinner. With or without mushrooms?
