This recipe “rocks it for me” – it is a recipe that you can make quickly, it is savoury and delicious and it is a hat trick: you can eat it for breakfast, dinner (side dish) or as an appetizer (with a nice dip – we like Helluva Good french onion or ranch). As well, it is a great way to use up your leftover stuffing!! I paired it with this music, as it is a lively tune that my daughter did a tap solo to last year and everytime I hear it, I grin from ear to ear as I think of her amazing footwork! You, too, can get lively & try to keep up with the dancers in this piece! Just don’t hurt yourself! Enjoy these rolls and I bet you think of this tune throughout the day!!!

Ingredients
1 box of Stove Top stuffing (or 3 cups leftover stuffing, cooled)
1 c water
2 Tbsp butter
¼ c. finely chopped mushrooms
¼ c. finely chopped green onion
6 slices bacon
1 egg
Directions
Preheat oven to 375 deg F. Foil line a baking sheet.
Cut each bacon strip in half. In large bowl, mix box of stuffing, water, butter, mushrooms and green onion. Once mixed and fluffed with fork, add egg and mix in well. Roll stuffing into small balls (meatball size, or about 1 rounded teaspoon of stuffing). Wrap a piece of bacon around each stuffing ball and place on foil lined baking sheet.
Bake for 15 – 20 minutes, until bacon is cooked and a bit crispy. At the end of baking, you could broil for 2 – 3 minutes to make tops very crispy.
For breakfast – serve with your favorite eggs (this screams for poached eggs for me) and some fresh fruit.
As an appetizer, serve with a favorite dip: Heinz chili sauce; Ranch dressing; French onion dip…
Alternative – replace mushrooms and green onion with ¼ c. shred zucchini and ¼ c. shred sweet potato OR just ½ c. shred sweet potato.
