Spinach & Mandarin Orange Salad with Poppy Seed Dressing

I’ll tell you what’s alright – this spinach salad. It is rather festive in color and flavors – green, red, white and orange! You can buy poppy seed dressing, but I like making mine to add a bit more of a citrus flavor! It is a light salad that goes well at BBQs, potlucks and every big holiday meal – Christmas, Thanksgiving and Easter! That is why “it’s alright”…

Ingredients:

6 cups of fresh spinach

1 cup sliced and toasted almonds

1 small can mandarin oranges, drained well

4 oz of smoked gouda cheese, grated

½ cup dried cranberries

Dressing Ingredients:

1 cup mayonnaise

1 Tbsp orange juice

Dash of cinnamon

1 Tbsp poppy seeds

(optional – 1 tsp orange rind, zested)

Directions:

In large bowl, place spinach.

In small bowl, mix the mayonnaise, orange juice, cinnamon and poppy seeds.

Pour the dressing over the spinach and mix well. Sprinkle the oranges and cranberries over the spinach, then the cheese and almonds.

Serve with Ta-Dah Brined & Roasted Turkey or hubby’s smoked roast beef.
