Beef Burritos

Beef Burritos are one of our comfort foods. I like to make a double batch, then I individually wrap some of the burritos and freeze them. That way, we (by “we”, I mean my teens/young adults) take them out and have a quick breakfast or snack! They don’t last too long in the freezer… I like burritos as they are very healthy and cover the major food groups – protein (beef); dairy (sour cream & cheese); grain (tortilla – corn or flour or rice); carbs (refried beans); veggies (lettuce, onion, peppers, etc); fruit (tomato – yes, tomatoes are a fruit)! You can kick these up with additional heat by adding more cayenne or jalapeno salt or hot peppers as a garnish – but, definitely kick up the heat with Shakira’s “loca”.

Ingredients:

1 lb ground beef

¼ tsp garlic powder

¼ tsp onion powder

½ tsp smoked paprika

1 ½ tsp cumin

1 tsp sea salt

 ¼ tsp cayenne

1 Tbsp chili powder

1/2 tsp jalapeno salt (optional)

1 c shredded cheddar cheese

¼ c. finely chopped onion

¼ c. salsa

1 can refried beans

4 large tortilla shells (I like the cheese ones, but you can get different ones: corn, rice, flour, or flavoured ones)

(cheat version – replace all spices with a pack of ready-made taco or burrito seasoning)

Garnish:

Lettuce

Tomato

Grated cheddar or monterey jack

Chopped cilantro

Chopped green onion

Salsa

Sour cream

Hot peppers, sliced

Directions:

Fry beef and onion, until beef cooked and onion translucent. Add spices and salsa. Mix in refried beans and salsa and cheddar. Mix well.

On each tortilla shell, spread meat mixture in bottom 1/3 of shell (about ½ cup of meat). Do not put meat too close to edges. Fold in edges and roll.

Garnish with cheese and microwave until it melts. Garnish with lettuce, tomato, cheese, cilantro, green onion and/or sour cream.

Tip: make a double batch. Once you roll the burritos, wrap individually in film, then freeze in plastic bags. These can then be thawed and microwaved for an easy breakfast, lunch, supper or snack!
