When you just need something quick, healthy and delicious, consider this salad. I like it because it is quick to make and I usually have the ingredients at home. If you are not a shrimp fan, you can always substitute chicken in this recipe and it also works great! This salad really fits the lyrics of this song – “Said he’s going back to find, a simpler place and time”… enjoy Gladys Knight & the Pips and this amazing salad.

Ingredients:
2 Tbsp olive oil
4 cups fresh spinach
¼ – 1/2 cup white wine
2 -4 Tbsp balsamic vinegar
20 fresh or frozen (thawed) shrimp (alternatively, you can use cubes of 1 or 2 chicken breasts)
1 roma tomato, chopped finely
1 cup mushrooms, sliced
2 cloves garlic
1 shallot, diced
2 Tbsp fresh basil, chopped
2 tbsp fresh parsley, chopped

Directions

In large pan, heat oil. Add shrimp and cook until light pink. Remove and set aside.

In same pan, add onions and garlic. Saute’ for 5 minutes, until translucent. Add mushrooms and cook until soft. Add in wine and tomatoes and herbs, and let reduce. Add balsamic vinegar and salt/pepper.

Evenly distribute the spinach on two plates. Top the spinach by evenly distributing the warm shrimp and mushrooms dish. Add the shrimp to each plate. Sprinkle with fresh basil and parsley on top. Add more balsamic vinegar to taste.
