Easy Pie Dough (Pate Brisee)

The “Princess Bride” – PB is one of my all time FAVOURITE movies. I have watched it many, many times with my family. This is also one of my favorite PB (Pate Brisee) recipes so I am pairing them up! Plus, once you try this recipe you will have found your “one true love” for a pie dough recipe. I use this for quiche, banana cream pie, really any pie… so easy, so good.

Music Selection: Mark Knopfler & Willy DeVille – Love Story (from Princess Bride)

Ingredients

2 ½ cups flour

1 tsp sugar

Pinch of salt

1 cup cold butter, cut into cubes

¼ – ½ cup cold ice water

Directions

In large bowl, mix flour and sugar. Cut in the cold butter with a pastry cutter until the flour is crumbly and the size of peas. Next, slowly add in the water and mix. Once you add in about ¼ cup of the water, add by the tablespoon and keep mixing until the dough holds together in a ball. Don’t add to much or the dough will get sticky and you may need to add more flour.

Take the smooth ball of dough, wrap it in plastic wrap and put it in the fridge for about 30 minutes.

You should have enough dough for a bottom and top of a pastry pie. You can keep the dough wrapped well and sealed in a plastic bag for 2 weeks.
