My mom makes the best pies. This is one of her recipes and her photos that she sent me, as we live in different cities/towns. When I asked her what song it reminds her of she text me “Sugar Pie Honey Bunch”… and I know why, too. Or at, least, I think I do. When my oldest son was turning two, his best friend at the time, Sophie bought him a red dog for Valentine’s Day that danced and played “Sugar Pie Honey Bunch”. My mom was visiting and he played that song over and over and over… we all loved the dog, but were also glad when the batteries wore out! Of course, I could be wrong… she might be thinking about my dad as I think he got to eat this pie!
Music Selection: The Four Tops – Sugar Pie Honey Bunch
1 pie shell (or ½ of a recipe of pate brisee)
4 – 5 apples, peeled, cored and diced
½ cup brown sugar
1 – 2 tsp cinnamon (to taste)
1 cup flour
2Tbsp brown sugar
¼ cup rolled oats
½ cup cold butter
Preheat oven to 350 deg F.
In mixing bowl, mix flour, brown sugar and rolled oats. Cut in the butter, until well mixed. The texture should be crumbly. Set aside.
Roll out your pie dough so that it fits in a pie dish. Press it down gently so you do not get any holes. Then trim and crimp the edges.
In a bowl, toss the diced apples with the brown sugar and cinnamon. Pour into the pie shell and press down so it is evenly distributed. Bake in oven for 45 minutes.
Remove from oven and evenly spread the crumb topping on top. Place back in the oven and bake for another 30 – 45 minutes.
Let cool and serve with vanilla ice cream or whipped cream.
