Love Is All Around when you serve comfort food for the soul like Grilled Cheese with a hot bowl of creamy tomato soup to dip your sandwich in…. yum. We make this for breakfast, lunch, dinner and days you just aren’t feeling great. I also found this was a hit when my kids were small and had sleepovers as most kids, even the pickiest, will eat grilled cheese. I hope this recipe gives you the big hug you deserve today — give a few hugs away, too. Enjoy.

Ingredients:
8 slices of sourdough bread, or your favourite bread
4 – 6 slices of cheddar cheese
4 – 6 slices of Havarti cheese or Monterey jack or swiss cheese
¼ cup butter
2 cans tomato soup
1 can of water (refill the tomato soup can)
1 can of heavy cream (refill the tomato soup can)
Directions:
In large pot, pour the tomato soup, water and cream. Whisk and heat until bubbling. Simmer.
Spread out each slice of bread, pairing it with the slice next to it. Place a layer of cheddar cheese then a layer of Havarti on one slice of each pair of bread. Close the bread into a sandwich.
On the top slice, spread butter. On medium heat, place a cast iron frying pan. Place each of the sandwiches down on the frying pan, with the butter side down. On the side facing up, spread butter. Watch the bread closely so it does not burn.
In meantime, pre-heat oven to 350 deg F.
When the sandwich has browned, flip it over. Then place the bread in the oven for about 5 minutes, until the cheese melts and the bottom of the sandwich is also brown.
Tip: If you do not have a cast iron pan, then instead of using the oven, once both sides of the sandwich are brown, turn it to low heat and place a pot lid over the sandwiches to steam them until the cheese melts!
Cut the sandwiches and serve with a hot bowl of creamy tomato soup to dip in!
