Smoked Salmon Bagels

Time: 15 minutes

Sometimes the simplest dishes are so satisfying. This is one of them! I like to keep smoked salmon on hand in my freezer. It stays well frozen, thaws super fast and can be used for breakfast, brunch, lunch or dinner on bagels. When my hubby and I first were married, and super broke – he was in university and I had just started my first job – every Friday night, we’d go buy 2 bagels, a small container of cream cheese, smoked salmon, capers and a very cheap bottle of wine. Then we’d watch TV… wild and crazy times! It felt like such a great way to end the work week! Still is and a great way to start your day (no wine, though)…

Music Selection: Beach Boys – Sloop

Ingredients

1 plain bagel, sliced in half

2 Tbsp cream cheese or boursin cheese (we like the garlic/chive)

2 Smoked salmon slices

Red onion, sliced thinly, or diced thinly

1 Tsp capers, drained

Optional: diced tomato

Directions:

Toast bagel, then spread on cream cheese. Top with salmon. Add red onion, capers and tomato.

Tip: My kids put the onion, capers and tomato on the cream cheese and top it with the salmon to keep the toppings from falling off.
