Chocolate Banana Peanut Butter Chip Cookies

Makes 48 large cookies

This song is one that once you hear it, you hear it in your head all day long – it is addictive. So are these cookies. You can’t just eat one. Try it…

You should also know these cookies require a bit of time to make as you can only make 8 at a time and each batch bakes for 20 minutes…. but it definitely is worth it! If you are in a hurry, I’d suggest making a half batch, but really… that would be crazy! You will need all of them.

Music Selection: The Band – The Weight

Ingredients:

2 cups mashed bananas (about 3 large bananas)

2 cups sugar

1 ½ cups cold butter, cut into small cubes

2 eggs

1 tsp vanilla

4 cups flour

1 cup unsweetened cocoa powder

2 tsp baking soda

½ tsp salt

2 cups peanut butter chips (use chocolate if you can’t find them)

Optional: ¼ tsp ground cloves

Directions:

Preheat oven to 300 deg F. Line a baking sheet with parchment paper.

In large commercial mixer, add sugar, cold butter, eggs and vanilla. Mix until blended. Add in bananas, salt, and baking soda. Slowly add in flour, cloves and cocoa. Mix until blended. Mix on low speed and add peanut butter chips.

Remove from mixer. Using an ice cream scoop, spoon about 8 mounds of cookie dough, spread out evenly on the baking sheet. Bake in oven for 20 – 22 minutes.

Keep the dough cold while baking each batch of cookies.

Tip: If you use cold butter and low heat, the cookies will stay very moist and soft – chewy. Enjoy with a big mug of coffee or cup of tea (these also dip well in milk)!
