Avocado Toast

Since this blog was meant to offer up new and exciting ways of thinking about breakfast, I am including a simple avocado toast recipe. This past year or so, there has been a lot of different restaurants offering “toast” with various toppings. This is one that I like because it is easy, is savoury and offers up some “good” fats and carbohydrates to keep energy and brain function going throughout the morning! It makes me “feel good”… I bet it makes you feel good, too! You might even be able to keep up with JB!

Music Selection: I Feel Good – James Brown

Ingredients

2 slices toast

Butter

1 avocado

1 tsp lime juice

2 eggs

Salt/pepper

Tomato, sliced – optional

Feta cheese, crumbled – optional

Pistacios, chopped  – optional

Directions

Mash avocado with lime juice, salt and pepper. Toast and butter the bread. Spread avocado on toast.

Fry an egg, we like our over easy, and place on avocado/toast. If you like feta cheese, you can sprinkle it on the avocado before adding the egg! Serve with fresh fruit, tapenade and/or wrapped asparagus!

As an alternative: Replace egg with chopped pistachio  OR replace egg with slices of fresh tomato and sprinkle with feta cheese OR better yet – try it with some homemade tapenade!
