We made these little gems for the first time yesterday and they are now on the “family favourites list”. We liked them for supper with burgers and we liked them for breakfast with eggs and fresh fruit. I think I will also make these as an appetizer in the future, as they are easy to make delicious, and a finger food!

Ingredients
2 large yams, cut into wedges about ½ inch thick at widest part and 3 inches long
Full pack of bacon, cut in half – resulting in 22 – 24 short slices of bacon
2 tsp chili powder
3 Tbsp olive oil
1 tsp garlic powder
Salt/pepper
BBQ sauce or Ranch Dressing to dip in
Directions
Preheat oven (better if you have a convection oven) to 400 deg F.
Line a baking sheet with aluminum foil.
Peel and cut yams into wedges.
Toss in a bowl with the chili powder, garlic powder, salt/pepper and olive oil, until the yams are well and evenly coated.

Wrap a slice of bacon around each wedge of yam and place single layer on the baking sheet. If you have extra yam wedges, just cook them without the bacon!
Bake for about 35 minutes, but keep an eye on them because they can burn. I also turn them over after about 20 minutes so the bacon gets very crispy.

These can be served as an appetizer OR as a side dish for breakfast or supper!
