I was at a nice restaurant recently whose menu focuses on traditional Scandinavian and french cuisine. One of the lunch items was Skagen, which my friend, who lived in Sweden for several years, had to have for nostalgic reasons… and also for the absolute delightful flavours! I’ve recreated this dish for my family and we like it for brunch or lunch! Easy to make and healthy! Enjoy to the soft, haunting music of Alice Boman, who is from Malmo, Sweden.

Ingredients:
1 lb peeled and cooked prawns or large shrimp
½ c mayonnaise
½ cup sour cream
1 tsp cognac
Salt/pepper
4 slices bread (sourdough is great)
2 Tbsp butter
2 Tbsp fresh dill
2 oz salmon roe
1 lemon, cut into 4 wedges
optional: boiled egg, crumbled on top of Skagen
Directions
Mix the mayonnaise, sour cream and cognac together. Add salt, pepper and dill. Meanwhile, toast and butter the bread. Stir prawns in mayonnaise and toss. Pile on top of buttered toast and sprinkle with roe and/or crumbled boiled egg. Serve with fresh fruit on the side.
