Music Selection: Great Big Sea – When I’m Up
Ingredients:
1 ¼ cup milk
1 egg
½ cup flour
½ tsp paprika
½ tsp garlic powder
½ tsp mustard powder
Salt/pepper
Extra 1 cup flour to dredge
4 large cod fillets
4 cups oil to deep fry fish (or less if you are going to just fry it)
Tartar sauce or Aioli Tartar Sauce
Directions:
Pour 1 cup flour in shallow bowl. Set aside.
In large pot heat oil to deep fry (or in large frying pan, put at least ½ cup – 1 cup oil). Heat oven to 350 deg F.
In separate mixing bowl, whisk milk, egg, flour and seasonings well. Add extra milk if you want a lighter batter. Cut fish into squares about 3 inches per side. Dredge fish in flour, then dip in the egg mixture.
Once oil is hot and a drip of the batter sizzles, it is ready. Drop two or three pieces of fish in oil at a time and cook until brown, then flip. When brown on both sides, remove from oil and put on a pan and keep warm in oven. Continue to cook pieces of fish.
Serve with tartar sauce and French fries with malted vinegar. Other great side dishes are Earl’s Spinoff potato salad, the best potato salad or coleslaw.
