Time: 20 minutes
This is a quick, healthy seafood pasta dish that is deliciously filling. Inspired by the pasta, I am pairing it with Patrizio Buanne in this funny tune that is a dialogue between a mother and a daughter who wants her mom to find her a husband because the “moon is in the middle of the sea”… what a concept???

Music Selection: Patrizio Buanne – Che La Luna Mezzo Mare
Ingredients:
1 pound linguine, fettucine or penne pasta
8 cups water
Salt/pepper
3 Tbsp olive oil
1 pound shrimp, with tail on
2 cloves garlic, minced
¼ cup chopped fresh basil
¼ cup chopped fresh parsley
1 shallot, diced finely
1 cup white wine
1/3 cup clam juice
1 ½ cups heavy cream
¼ cup grated parmesan, plus more for garnish
Directions

In large pot, boil salted water. Add pasta and cook according to directions.
In meantime, in large skillet, sauté the garlic and shrimp in the oil. When shrimp are pink and slightly curled, remove shrimp and set aside.
Add shallots to the pan and when they are soft, add in the white wine, clam juice and heavy cream. Bring to a light boil, then reduce to simmer. Add in the parmesan, basil and parsley. Let simmer for about 15 minutes, until it thickens.
Add the prawns back in and heat for 1 – 2 minutes.

When pasta is done, drain it and put it in a large bowl. Quickly pour the sauce over it. Mix well. Plate some pasta and shrimp, then top with more basil, parsley and parmesan!
