Meatball Subs

Time: 15 minutes (plus time to cook the meatballs – 45 minutes)

Who do you love? I have a long list, I hope you do, too. But, we all have times when we may feel a bit alone. I love the words to this song, by another amazing Canadian band:

“Everything goes quiet, it’s like I just can’t move
You say I might as well try it, there’s nothing left to lose
Nothing will change if you never choose

Well, I’ve been deep in this sleeplessness, I don’t know why
Just can’t get away from myself
When I get back on my feet, I’ll blow this open wide and carry me home in good health”

I hope today, everyone reading this is able to choose to get back on their feet, to keep moving forward, and to make a list of everyone and everything you love! Wishing you all good health (and great food).

Music Selection: Marianas Trench – Who Do You Love?

Ingredients:

20 – 24 parmesan meatballs, cooked

4 – 6 submarine buns (torpedo buns)

6 slices mozzarella cheese

1 cup pizza sauce

Shredded lettuce

Sliced fresh tomato

Butter

Directions:

Make, bake and cool parmesan meatballs.

Turn on oven broiler to high.

On baking sheet, lined with foil, lay the submarine buns, split side up. If you like to butter your buns, do so. Then put buns under broiler and broil until lightly brown – usually 2 – 5 minutes.

Remove from heat, but leave broiler on.

On each bun, spread some pizza sauce on both sides of the bun.

Then place 4 – 6 meatballs on each bottom bun.

On the top of the bun or on the meatballs, place some cheese. Put the subs back under the broiler and heat until the cheese is melted. Watch carefully.

Remove from heat and top with additional pizza sauce, lettuce and tomatoes!

You can serve it with additional pizza sauce or marinara sauce to dip in!! Enjoy!
