My future lays beyond the yellow brick road… or beyond the banana chocolate chip bars… sigh. These bars are a great way to use up bananas that are ripe. They are a nice thin bar, so you can eat a few. They are a bit sweet, so I recommend a strong cup of tea or coffee to go with them. Always a hit at high tea — both the bars and Elton!

Cake Ingredients:
½ cup sugar
½ cup brown sugar
2 eggs
½ cup vegetable oil or melted coconut oil or melted butter
1 ½ cups flour
1 cup mashed bananas (about 2 bananas)
½ tsp baking powder
½ tsp baking soda
½ tsp salt
Dash of cloves
¾ cup chocolate chips
1 tsp vanilla
Icing Ingredients:
¾ cup icing sugar
½ cup chocolate chips
2 – 3 Tbsp milk
2 Tbsp butter
½ tsp vanilla
Directions:
Preheat oven to 350 deg F. Butter a 9 x 13 pan.
In large mixing bowl, combine sugars, oil and eggs, beat until light and fluffy. Add flour, bananas, baking powder, baking soda, cloves, vanilla and salt. Beat at low speed until mixed. Hand mix in the chocolate chips.
Pour into pan and press down evenly with spatula. Bake for 20 – 25 minutes.
Let cool.
Make icing by putting the chocolate chips, milk, butter and vanilla in a microwave proof bowl. Microwave for 1 minute and mix. Microwave for another 30 seconds to 1 minute and mix.
When smooth, add in the icing. Mix well. Pour over the cake. Let cool.
Cut and serve with milk, tea or strong coffee! Great for a tea party.
