Shrimp Omelette

Time: 15 minutes

” Omelettes are great to wake up to – these are especially great as they have shrimp and greens in them! Delicious for breakfast or brunch (or supper). Now, I bet that makes you happy!

Music Selection: Monkees – Day Dream Believer

Ingredients

Oil

8 eggs

1 cup chopped fresh spinach

30 cooked and peeled shrimp

1 ½ cup grated cheddar, gouda or Monterey jack

1 tsp dried dill

Salt/pepper

Toppings: diced tomatoes, green onion, fresh basil, fresh cilantro

Directions
In bowl, beat eggs. Add dill and salt/pepper.

Heat a skillet with a Tbsp of oil. Pour in half of the eggs and let cook on medium heat.

Sprinkle some cheese over one half of the eggs, then lay down the shrimp on the same half. Top with a light layer of spinach and more cheese.

When the egg is nearly cooked through, flip the egg only half over on to the loaded half. Remove from heat.

Make the second batch.

Top with tomatoes, green onion, and/or fresh herbs. Enjoy!
