Creamed Spinach

Time: 20 minutes

Your family will “Say Yes” to this side dish of delicious greens. Here is the thing – they are fast and easy to make and a good source of vegetable greens. I like to make it as a side dish for supper and then heat it up for breakfast as a side to grits with a poached egg. Enjoy!

Music Selection: Sia (ftg Rhianna & David Guetta) – Say Yes

Ingredients:

¼ cup butter

5 Tbsp flour

½ cup diced onion

2 cloves garlic, minced

2 cups milk

Salt/pepper

1 tsp dried dill

1 chicken bouillon cube or 1 Tbsp chicken base

6 cups fresh spinach

Directions:

In large sauce pan, melt butter and saute the onions and garlic, until translucent.

Add in flour and mix well to coat the onions, there should be no white flour, it should be a roux. Add the milk, dill and bouillon and mix until it thickens. Salt and pepper to taste.

Add in the spinach and mix to coat and until it is slightly wilted.

Serve as a side dish to saucy crockpot ribs and rice.

As a breakfast dish, serve with creamy cheesy grits, a poached egg and sprinkle with crispy bacon bits!
