Breakfast Ham & Cheese Wrap
Makes 1
Time: 15 minutes
Music Selection: Jann Arden – Good Mother

Ingredients:
Oil
1 egg (for small tortilla, but use 2 eggs for medium/large tortilla), well beaten
Salt/pepper
1 medium to large tortilla shell
2 slices of ham, chicken or favorite lunch meat (macaroni loaf or salami)
½ cup grated cheddar
Optional toppings: sliced green pepper, red onion, tomato, spinach, mushrooms, avocado
Salsa
Sour Cream
Ranch Dressing
(To use same ingredients as a quesadilla, try the Breakfast Quesadilla)
Directions:

In skillet, heat up oil. Pour in eggs (salt/pepper) and let cook. When eggs are nearly cooked all the way through, gently flip. Turn off heat.
On plate, place a tortilla shell. Place meat and other toppings to cover bottom ¾ of tortilla. Place cheese on top of toppings (this allows cheese to melt a bit).
Place warm cooked egg on top.

From bottom, roll up the tortilla.

Place in oven or microwave to heat thoroughly (30 seconds in microwave). Enjoy with salsa, sour cream, and/or ranch dressing.
