Breakfast Wrap or Breakfast Quesadilla? Ohhh, the choices!

Luba sings a tune called “Let it Go” that fits with the purpose of this blog – to change our conventional ways of looking at breakfast. “Uniformity, Conventionality, Is the fate of our existence. Keep it safely at a distance.” Today – I offer you two simple breakfasts with essentially the same ingredients, with lots of options to make it yours, and to try time and time again… Each recipe links to the other, so you can try both and see which recipe and music you prefer today and tomorrow! Breakfast Ham & Cheese Wrap

Makes 1

Time: 15 minutes

Music Selection: Jann Arden – Good Mother



1 egg (for small tortilla, but use 2 eggs for medium/large tortilla), well beaten


1 medium to large tortilla shell

2 slices of ham, chicken or favorite lunch meat (macaroni loaf or salami)

½ cup grated cheddar

Optional toppings: sliced green pepper, red onion, tomato, spinach, mushrooms, avocado


Sour Cream

Ranch Dressing

(To use same ingredients as a quesadilla, try the Breakfast Quesadilla)


In skillet, heat up oil. Pour in eggs (salt/pepper) and let cook. When eggs are nearly cooked all the way through, gently flip. Turn off heat.

On plate, place a tortilla shell. Place meat and other toppings to cover bottom ¾ of tortilla. Place cheese on top of toppings (this allows cheese to melt a bit).

Place warm cooked egg on top.

From bottom, roll up the tortilla.

Place in oven or microwave to heat thoroughly (30 seconds in microwave). Enjoy with salsa, sour cream, and/or ranch dressing.
