One Dish Ham, Peas & Carrots

Time: 1 ½ hours

Such a simple dish, but always a hit at our house. Leftover ham and eggs can be fried for breakfast the next morning… If you have kids (or even if your household is just adults), I’d encourage playing the Seussical version of “Green Eggs & Ham”… it will bring back good memories, if you read the book, and if it is new to you – go buy the book, learn the words and sing / dance along.

Music Selection – Green Eggs & Ham – Seussical

Ingredients:

750 g – 1kg ham without bone

2 cups frozen peas

1 cup carrots, peeled and coined

2 cups corn, frozen

2 cups chicken broth

(additional water)

Butter for vegetables

Directions:

Preheat oven to 350 deg F.

In large casserole dish, with lid, put peas, carrots, corn and chicken broth.

Add water or broth to cover the vegetables. Place ham on top of vegetables.

Cover with lid and bake in oven for an hour, until you have vegetables to the consistency you like (you may want to check these at 45 minutes if you like your vegetables a little crunchy or leave them longer if you like them “mushy”). As well, if your ham is frozen, it may take closer to 90 minutes to get it all cooked and hot.

Remove the ham and slice it.

Drain the vegetables and add a few Tablespoons of butter. Serve ham and vegetables hot with roasted potatoes or Greek potatoes. We also like to try different mustards with our ham – dijon, honey mustard, french’s…. see what you like (maybe a side of sweet pickles?)
