Roasted Potatoes

Time: 45 minutes

After we had our third child, hubby and I decided we needed a date night and some exercise – the solution? Dance classes. We signed up and it was a bit of a disaster as hubby doesn’t hear a beat and found it frustrating to learn the waltz, fox trot, etc…. however, apparently he can hear the beat in a cha-cha. Crazy, I know. Anyways – my hubby is a meat and potatoes cha-cha kind of guy – so this pairing is for him!!!

Music Selection: Mr C The Slide Man – Cha-Cha Slide

Ingredients:

4 -6 medium potatoes, peeled and cut into 1 inch cubes

¼ cup olive oil

Salt/pepper

Optional:

1 tsp garlic powder

1 tsp onion powder

1 – 2 tsp chili powder or dried dill

Toppings: butter, sour cream, crispy bacon bits, fried onions, fresh dill

Directions:

Preheat oven to 400 deg F.

Line a baking sheet with aluminum foil.

Peel potatoes and dice into 1 inch cubes. Put in a large bowl. Toss with the olive oil, salt/pepper and any other combination of spices that you’d like.

Pour potatoes onto baking sheet and ensure they are single layered.

Bake for 20 minutes, then flip potatoes and bake another 10 – 15 minutes.

Serve with sour cream and crispy bacon bits or some of the other toppings. I like to make a big batch and fry up the leftovers for breakfast!
