Crockpot Sauerkraut & Bratwurst

Time: 8 – 10 hours

I like to use a crockpot on days when I know I will be rushing home from work to take one of the kids to some sports event, but they need to eat before we go! This recipe is super simple and I put it on as I am leaving to work in the morning. The kids just boil some potato chunks, toss them with butte and parsley and then add the sauerkraut and bratwurst. It is a delicious, healthy meal. As well, I have paired it with an Oktoberfest tune, as it also is a great dish to enjoy with a pint!

Ingredients

2 L sauerkraut, rinsed well

4 – 5 carrots, peeled and cut into quarters

1 onion, diced

6 slices bacon, fried crispy and cut into bacon bit size

4 L chicken broth

2 Tbsp dried parsley

5 -6 bratwurst

Directions:

Rinse and drain the sauerkraut.

In crockpot, place crispy bacon, onion and carrots.

Add sauerkraut, parsley and chicken broth. Mix well.

Lay the bratwurst on top. Cover the crockpot and cook on low for 8 – 10 hours.

Serve with chunks of boiled potato, tossed with butter and parsley! Enjoy.
