Cardamom Banana Pecan Loaf

We’ve only just begun to make interesting and innovative breakfast recipes! I have modified an old favorite banana loaf recipe to make hubby happy. He likes cardamom, cloves and nuts in his banana bread, but no chocolate chips. Two of our kids like chocolate chips in the loaf… so, you can choose whether to add them or not in your loaf! This is great as a breakfast, brunch or high tea option with coffee or tea – enjoy your day and enjoy your loaf… and remember, your day has just begun! Make it great.

Time: 1 hour and 15 minutes

Music Selection: Carpenters – We Only Just Begun

Ingredients:

1 ¾ cups flour

½ tsp baking soda

1 1/s tsp baking powder

1/8 tsp salt

½ tsp cardamom, ground

1/8 tsp cloves, ground

1 cup chopped pecans

Optional: 1 cup chocolate chips

¼ cup oil

¾ cup sugar

1 egg

1 cup mashed bananas (2 bananas)

1 cup milk

Directions:

Preheat oven to 350 deg F.

Spray or coat a loaf pan with oil. Set aside.

Combine flour, baking soda, baking powder, sugar, salt, cardamom, cloves and pecans. Add chocolate chips at this stage, if adding them.

In separate bowl, mash bananas and set aside.

In another bowl, mix milk, oil and egg. Mix well, until egg beaten.

Pour bananas and liquid ingredients into the dry ingredients. Mix well. Pour into loaf pan and bake for 60 minutes.

Let cool for 10 minutes before slicing. Enjoy with butters, honey, peanut butter, nutella and jams.
