Coconut Raspberry Overnight Oatmeal

Time: 15 minutes (and overnight)

Makes 4

This is another breakfast cheat if you make it the night before. But, it is such a great and worthwhile cheat. It will have you shouting “yabba dabba doo!”. Enjoy this delicious and healthy breakfast!

12 oz carton vanilla, honey or coconut Greek yogurt

1 1/3 cup rolled oats

1 1/3 cup coconut milk

1/3 cup dried coconut (shred)

1 cup fresh or frozen raspberries

2 Tbsp sugar (brown sugar or maple syrup)

2 Tbsp chia seeds

Raspberries and fruit syrup (raspberry or peach) for garnish


In large bowl, mix yogurt, oats, coconut milk, sugar and chia seeds until well blended.

Equally distribute half of the yogurt mix into 4 glasses. Put ¼ cup of raspberries in each glass. Then equally distribute remaining yogurt mix over the raspberries.

Top with extra raspberries and fruit syrup. Cover and refrigerate overnight.

Enjoy with tea or coffee the next morning!
