Green Salad & Grapefruit Vinaigrette

Time: 20 minutes

As spring arrives, my body craves a change in diet and exercise. This is one of those light vinaigrette dressings that I can’t get out of my mind as the weather warms up and we start BBQ season! Although the snow has not entirely melted, we turned on our BBQ and heat up the Big Green Egg AND we made this delicious side-salad. It can be a full meal, too just add cooked shrimp or chicken! I am pairing it with one of my favorite piano pieces by a great Canadian artist – Frank Mills. This salad, this music, and you will believe you can do pliés!

Music Selection: Frank Mills – Music Boxer Dancer

Salad Ingredients:

Lettuce, tomatoes, cucumbers, celery, red pepper, green onion, goat cheese (or other favorite cheese)

Vinaigrette Ingredients:

½ cup white wine vinegar

½ cup ruby red grapefruit juice

1 green onion, finely diced

½ tsp Dijon mustard

1 garlic clove, minced

¼ cup olive oil

Salt/pepper

Directions:

In large bowl, mix the lettuce. Chop up the tomatoes, cucumbers, celery, red pepper and green onion and mix with lettuce. Top with goat cheese. Set aside.

Vinaigrette: Mix all ingredients together with whisk. Serve over a green salad (lettuce, tomatoes, cucumbers, goat cheese)! As a full meal, you can add chicken or shrimp to this salad!

Delicious, light and healthy!!
