Even though all five of us have our own distinct music likes and dislikes, the one band we all seem to agree on when traveling is CCR… it is quite funny to me how much we all like them. One other thing we all really like – Beef Au Jus! Yet, we all create ours quite differently! My oldest son, puts everything on this – even hot peppers! Hubby, likes his with coleslaw. Our middle son likes it with horseradish, mustard, tons of meat and some cheese. Our daughter- loves it with pickles…. I like to change it up everytime… Such a simple meal to make and yet, we each get to put our own twist on it… Try it and see how you like it…
4 – 5 lb beef roast (chuck or rump)
4 cups beef broth
1 onion, thinly sliced in rings
1 clove garlic, minced
1 Tbsp horseradish or Dijon mustard
2 Tbsp worcestershire sauce
1 Tbsp dried basil
6 slices of cheese (cheddar, swiss, Havarti, Monterey jack)
1 tsp garlic powder
Toppings: mustard, Dijon mustard, horseradish, dill pickles, tomato slices, coleslaw, **fried mushrooms
Mix broth, garlic, horseradish, basil and Worcestershire sauce in large crockpot. Add in onion.
Take Beef roast and sprinkle with salt, pepper and garlic powder, then add into crockpot. Cover the crockpot and then turn it on low for 8 – 10 hours.
When done, remove roast and pull it apart. Strain the beef broth and keep hot. It is optional if you want to discard or keep the onions for the buns.
Take buns and add mustard or horseradish. Place a large amount of beef on the bun then add toppings like cheese, pickles, the onions from the crockpot, fried mushrooms, or even coleslaw. Top with the other half of the bun.
**To fry mushrooms, add 1 Tbsp oil or butter to a large pan. Turn on medium, saute sliced up mushrooms (2 cups) in the oil and sprinkle with salt, pepper and garlic salt!
Take a bowl and ladle in some of the beef au jus. Dip your bun in the jus and enjoy!
