Cream Cheese Broccoli Stuffed Potatoes – breakfast? side dish?

Time: 1 hour (oven); 15 minutes (microwave)

Seriously…. what are you gonna do? Make these for breakfast with scrambled eggs or a side-dish with chicken or steak???? Decisions… decisions. I’d do both… Maybe Chilliwack can help you find the answer. By the way – this is a breakfast cheat recipe if you make it in the microwave – takes 15 minutes!

Ingredients:

4 medium potatoes

4 slices bacon, baked crisp and chopped into bacon bits

1 cup cream cheese

1 tsp dried dill

1 green onion, finely diced

1 cup broccoli steamed and chopped fine

1 cup grated cheddar cheese

Directions:

Oven method: Preheat oven to 350 deg F. Wash each potato and wrap in foil. Bake in oven for one hour.

Microwave method: Wash potatoes and poke all over with fork. Microwave for 4 minutes. Flip potato and microwave another 3 -4 minutes, until cooked.

Bacon – fry or bake bacon until crispy, then chop into bacon bits.

Filling: Steam the broccoli or put in microwaveable bowl and top the broccoli with water; microwave for 3 minutes, then drain. Chop broccoli into small pieces.

With beaters – beat cream cheese, dill, green onion and warm broccoli pieces.

When potatoes are done, make a slice on the top of the potato and use your fingers to press the long ends together to make the slit larger. Scoop a large around of the cream cheese filling into the hole of the potato.

Then sprinkle on some bacon bits. Top with a good pinch or two of grated cheddar. Either put on the broiler for 1 – 2 minutes, until the cheese melts or pop in the microwave for 45 – 60 seconds. For breakfast – serve with scrambled eggs. For supper – serve with Rosemary, garlic marinaded steak and Chili Corn on the Cob.
