If you haven’t been to the Calgary Stampede – you really should go. It is a world class event in horse riding, wagon racing, bull riding., roping etc. It is a dangerous and exciting sport/skill. In any event, it is a fun family event and Calgary knows how to really party each year for the 10 or 11 days it is held in July. Calgary is a unique city, too – it has all the airs of a big cosmopolitan city with a diverse group of professionals from all over the world, paired with true cowboys and ranchers. I am pairing this rice dish, which is a delicious fancy side dish or amazing breakfast dish (with an egg on top) as it reminds of a “city slicker” type of dish…. performed by the Stampeders, of… you guessed it – Calgary.

Ingredients:
1 ½ cups rice
3 cups chicken broth
¼ cup finely chopped onion
1 cup broccoli chopped fine
Zest of one lemon
½ cup grated parmesan cheese
2 Tbsp butter
Directions:
In a medium saucepan, melt butter and saute the onion and broccoli until soft.
Mix in the chicken broth, rice and lemon zest. Bring to a boil, then turn down heat. Cover the pot and let simmer for 20 minutes.
Remove from heat and stir in the parmesan cheese. Serve as a side dish with pork, chicken or beef.
Breakfast: Make fresh or re-heat leftover rice and serve with a poached egg on top!
