Baked Cauliflower with Cheesy Broccoli Sauce

Sweet Dreams are made of cauliflower and broccoli? When my oldest was very young, we had to hide the broccoli until he ate other food, as he’d only eat a plate of steamed broccoli (without cheese sauce)… 20 years later, he (and his siblings) still love broccoli. I like this recipe as it uses a head of cauliflower and a head of broccoli! So healthy, a bit of work, but well worth it! Enjoy.

Ingredients:

1 head cauliflower, cut into florets

2 cloves garlic, minced

¼ cup butter

¼ cup flour

2 ½ cups milk

Optional: 1 tsp chicken bouillon

1 head broccoli, chopped up

1 cup panko bread crumbs

2 Tbsp fresh thyme, chopped finely

¼ cup flaked almonds

Olive oil

3 cups grated cheddar cheese (or you can use gouda or swiss cheese)

Salt/pepper

Directions:

Preheat oven to 350 deg F.

In large sauce pan, saute’ garlic in the butter. When fragrant, add in flour to mix well into a paste.

Slowly stream in the milk and use a whisk to heat and thicken. If adding bouillon, add it now. Add the broccoli and let simmer about 20 minutes, until broccoli is cooked. Use a stick blender to puree the sauce (remove it from heat before doing this though). Once blended, add 1 cup of the cheddar cheese and mix well.

In large baking dish (9 x 13), butter it well. Place the cauliflower florets evenly.

Pour over the broccoli sauce. Then sprinkle on remaining cheddar.

In a bowl, mix the panko, almonds, salt/pepper and thyme well. Add a dash or two of olive oil. Spread evenly over the cauliflower. Place in oven and bake for one hour. Serve immediately.
