I love to make recipes “my way” – just a pinch or two of certain ingredients to classic recipes to make it our way. Often, I find I add dill, garlic or lemon… This recipe is so very simple and is a blast from the past with a twist on a good old fashioned cheese ball or log. However, I provide many suggestions for coatings that I thought I’d share with you and I hope you can try it and make it “your way”.
Music Selection: Frank Sinatra – My Way
Ingredients:
1 ½ cups shredded cheddar cheese
1 – 250 g cream cheese, room temperature
2 green onions, minced
1 tsp paprika
1/8 tsp cayenne pepper
Coatings: (Pick 3 or 4 of the coatings below – we used pecans, dill and dried cherries)
½ cup pecans, chopped finely
¼ cup dried dill
¼ cup chopped fresh parsley
¼ cup sesame seeds
¼ cup dried cherries, chopped finely
¼ cup dried cranberries, chopped finely
¼ cup chopped fresh basil, chopped finely
¼ cup crispy bacon, chopped finely
¼ cup sunflower seeds
3 Tbsp lemon zest
Directions:
Mix all of the cheese ingredients with a blender or by hand.
Let chill for about 30 minutes.
Roll into small balls of cheese – should make about 20 – 24 small balls.
Pick several coatings (we use 3 or 4) and roll 5 or 6 balls in one of the coating, then another 5 or 6 balls in another coating, etc until all the cheese is used up.
Serve on a tray with knives to spread. Serve with sliced baguette or crackers.
