Do you know what I like about this recipe? You can “get ready” while it bakes! It is a great dish to make, even for breakfast (just add some scrambled eggs and small pieces of ham). This is a recipe one of my sister-in-laws made for Christmas dinner and it was an absolute hit as a delicious, easy side dish. Enjoy!

Ingredients:
2 cups long grain rice
1 pkg cream of vegetable soup mix
1 tsp dried onion powder
¼ cup soy sauce
½ cup oil
3 ¼ cup boiling water
1 can (10 oz) sliced mushrooms, drained
3 chives or green onion, finely diced
**Optional: if you want this more like a fried rice, you can add ¼ cup of peas, corn and chopped slices of carrot. As a breakfast dish, you could add some scrambled up eggs and some diced ham.
Directions:

Preheat oven to 350 deg F.
In 2 quart casserole, grease it well and put in rice. Spread evenly.

In large measuring bowl, put soy sauce, oil, soup mix, onion powder. Mix. Add boiling water to reach 4 cups of liquid. Mix and pour over rice.
Add mushrooms and green onion/chives to rice and mix well.
Cover with foil and a lid. Bake for 1 hour. This is a great side dish to steak.
Breakfast idea: Make this while getting ready or take leftovers and add some scrambled egg or diced ham and re-fry to have fried rice for breakfast!
