Chicken Chickpea Shakshuka

Time: 45 minutes

Would you be happier eating this shakshuka? Yes, yes – you would and you’re going to be “just fine” today…. especially if you make this dish. It is a one skillet dish, fast, healthy and the flavours taste even better the next day!

Ingredients:

4 Tbsp olive oil

1 onion, diced finely

1 red pepper, diced finely

1 – 2 green jalapenos, finely chopped

2 tsp smoked paprika

4 cloves garlic, minced

1 tsp cumin

Salt/pepper

2 x 10 oz cans pureed tomatoes

2 x 14 oz cans chickpeas

1 cup water

8 chicken thighs (skin on or off – your choice)

Garlic salt

1 cup crumbled goat cheese or feta

1 handful finely chopped parsley or cilantro (or both)

Directions:

Preheat oven to 350 deg F.

In oven proof skillet, saute’ the onions, red pepper, garlic and jalapenos in the olive oil. When the vegetables are soft, add in the paprika, cumin and salt/pepper. Mix well.

Add in the pureed tomatoes, chickpeas and water. Mix well.

Place chicken thighs on top. Sprinkle with salt/pepper and garlic salt.

Place in oven and cook until thighs are fully cooked – about 30 minutes.

Sprinkle on cheese and let cook for another 5 minutes.

Remove from oven and sprinkle on the parsley/cilantro. Serve with toasted baguettes.
