Salmon Frittata

If I had to the same again, I would, my friend… Frittata. This is a great way to have a healthy start to the day. I like to BBQ salmon and this is an excellent way to use any left over salmon up. This breakfast is so delicious, that it is worth making for company for brunch, with some delicious mimosas. As a breakfast cheat – you can mix the egg mixture up the night before and leave it in the fridge…

Time: 25 minutes

Ingredients:

3 – 4 oz baked salmon or smoked salmon, sliced in thin chunks

8 eggs

¼ cup cream

2 Tbsp dried or fresh dill, chopped finely

Salt/pepper

1 tsp butter or olive oil

¼ cup diced red onion

2 Tbsp capers, drained

1 cup shredded double smoked cheddar cheese or another favorite cheese: mozzarella, gouda, swiss, goat cheese

Fresh tomato diced for garnish

Fresh parsley, chopped for garnish

Directions:

Preheat oven to 400 deg F.

In large bowl, mix eggs, cream, dill salt/pepper and set aside.

In oven proof skillet, saute the red onion in the butter. Add the capers.

Turn the heat of the pan off once onions are translucent. Sprinkle the cheese over the onions and capers. Then slowly, pour the eggs over to not disturb the cheese.

Evenly place the chunks of salmon into the egg mixture.

Remove pan from stove top and put in oven. Bake for 14 minutes. Let cool for 10 minutes, then cut into wedges and serve with garnishes and buttered toast.
