Music Selection: Pursuit of Happiness – She’s So Young
It is Canada Day and I thought I’d pair a red and white dish (cabbage and onion and apple) with a Canadian band – the Pursuit of Happiness! Canada is a country known for its friendly citizens – we are a happy lot. Come visit and see for yourself.

Ingredients:
2 Tbsp butter
1 onion, diced
½ head of red cabbage, cut in strips
1 ½ cups red wine
¼ cup red wine vinegar
1 cup water
¼ cup balsamic vinegar
1 firm apple – granny smith, gala or fuji, peeled and diced
1 ½ Tbsp sugar
Salt/pepper
Dash or two of cloves
1 bay leaf
Directions:
In large pot, melt butter and cook onion until soft. Add cabbage and cook for 20 minutes, until wilted.
Add wine, water, vinegars, apple, sugar, salt and spices. Stir well, to loosen anything sticking to bottom of pan.
Bring to boil. Reduce heat, cover and simmer for 2 hours.
Remove lid and raise heat to evaporate liquid.
Serve hot with pork ribs and mashed potatoes, gravy and green beans or slimming broccoli salad!
