Slimming Broccoli Salad

Time: 15 minutes

Summer time – summer body! This is a great, delicious salad to eat all summer long. It is great for BBQ parties and potlucks and keeps well. It is very simple, healthy and crunchy! It is a salad to eat “forever and ever”… I hope you enjoy it and the music.

Ingredients:

3 cups chopped broccoli florets

1 cup finely chopped, shredded green cabbage

1 cup finely diced celery

½ cup finely chopped red onion

¼ cup pumpkin seeds

¼ cup either sunflower seeds or sliced almonds

Dressing:

1/3 cup fresh lemon juice

¼ cup olive oil

2 Tbsp Dijon mustard

1 tsp apple cider vinegar

Salt/pepper

Directions:

Chop and mix all the salad ingredients together well.

In small bowl, mix all the dressing ingredients well. Pour over the salad. Let sit for an hour in fridge before eating.
