Prosciutto Cheese Appetizer

These little packages of heaven will take you away! I had this amazing appetizer at a local restaurant and had to try it at home. I think I nailed it. Made me so happy, I had to play Love Shack and dance around the kitchen… you will, too…

Ingredients:

12 slices prosciutto

12 balls of bocconcini cheese (about 1 oz each) or use medallions and cut them in half

1 – 9 fl oz can of crushed tomatoes

2 Tbsp dried basil

¼ cup white wine

¼ cup parmesan, grated

Directions:

Pre-heat oven to 375 deg C.

In a bowl, mix the crushed tomatoes, basil and wine. Set aside.

Take 2 slices of prosciutto and overlap them in the shape of a cross. In the middle, place the cheese. Roll up one slice of prosciutto, then with the open sides turn it and roll it in the other slice of prosciutto, so the cheese is sealed inside. Place in an oven proof pan. Repeat for all prosciutto and cheese.

Spoon the tomato sauce around the prosciutto packages. Sprinkle some parmesan on top of each.

Place in oven and bake about 15 minutes, until sauce is boiling, but do not let it burn.

Sprinkle with extra parmesan and fresh basil. Serve as an appetizer.
