Ingredients
2 large potatoes, peeled and cubed
½ cauliflower head, cut in florets
1 tsp ground mustard
2 garlic cloves, minced
¾ inch fresh ginger, cut finely
½ onion, diced
¼ tsp turmeric
1 tsp ground coriander
2/3 cup frozen or fresh peas
Cilantro
2 Tbsp butter
2 cups water
Directions:
In large cast iron pan, add 1 cup water, potatoes, cauliflower, ginger and garlic. Bring to boil, uncovered, mixing the vegetables. When the water is nearly evaporated, remove the potatoes and cauliflower.
To the hot pan, add the butter and onions. Saute until soft. Add the mustard, turmeric and coriander. Mix well.
Add another cup of water and the potatoes and cauliflower. Boil until water is nearly evaporated and potatoes are soft. Add more water if potatoes are hard.
Add in the peas. Mix well. Salt/pepper to taste. Garnish with fresh cilantro.
