Music Selection: Buddy Guy & BB King – Stay Around A Little Longer

Ingredients:

Brine:

3 cups water

1 tsp garlic powder

3 Tbsp salt

2 Tbsp balsamic vinegar

Pork Chops:

6 pork chops

4 Tbsp butter

¼ cup brown sugar

4 cloves garlic

½ tsp oregano

½ tsp thyme

Dash red wine

Directions:

In large ziplock, place brine ingredients and mix well until salt is dissolved. Add the porkchops. Close the bag and leave in the fridge for at least ½ an hour. The longer the better, but no longer than 8 hours.

Pat dry the pork chops when ready to cook them.

In large skillet, heat 2 Tbsp of butter. On medium heat, fry the pork chops so they brown on each side (sear for 2 – 3 minutes). Remove pork chops.

In hot skillet, add the remaining butter, brown sugar, garlic, wine and herbs. Mix well, when it starts to bubble, add back the pork chops and coat with the sauce. Serve immediately.

This pairs well with Irish Mashed Potatoes and Cabbage and Fresh Cucumber Salad.
