Chilean Rice

Time: 30 minutes

We had a potluck a few months ago and one of our guests made a traditional chilean rice dish for the party. It was soooooo good. I decided to give a try and it is also very easy to make. To get in the mood, we played Huasos. Enjoy both!

Music Selection: Traditional Chilean Folk Dance – Huasos

Ingredients:

1 ½ cups rice

2 Tbsp butter

¼ cup finely chopped red onion

2 Tbsp finely chopped red pepper

2 Tbsp grated carrot

3 cups chicken broth

Salt to taste

Directions:

Chop up vegetables.

Melt butter in large pot. Saute onion, red pepper and carrot until getting soft.

Add rice and coat in butter. Then add broth. Bring to boil, then lower heat, cover and cook for 20 minutes. Fluff with a fork and enjoy with Citrus Glazed Salmon and Broccoli Cheese Casserole.
