You will want to “surrender” to this amazing cake! It is great for breakfast, brunch, afternoon tea or dessert! It is a great way to use up apples and sour cream (which is why I made this today). It is a great Fall recipe, and the dash of cloves with cinnamon will make your home smell like apple pie… to serve and enjoy with those who are the apple of your eye.
Music Selection: Dolores O’Riordan – Apple Of My Eye

Ingredients:
½ c. butter room temperature
1 c. sugar
2 eggs
1 Tbsp vanilla
2 c. flour
1 tsp baking soda
1 tsp baking powder
¼ tsp salt
1 c sour cream (or plain yogurt or vanilla yogurt)
2 c. finely diced apple (peeled)
Topping:
¼ – ½ c. nuts (optional) – pecans or walnuts
1 tsp cinnamon
Dash cloves
½ c. brown sugar
2 tsp melted butter
Directions:
Pre-heat oven to 350 deg .

Grease a 13x9x2 pan (I like to use butter to grease the pan).

In a large bowl, cream butter and sugar with beaters.
Add eggs and vanilla. Beat well.
Slowly mix in flour, baking powder, baking soda and salt.
Once mixed, add in sour cream and mix well.
Stir in chopped apples and spread evenly in plan (use spatula or greased hands).
For topping, mix the cinnamon, cloves and brown sugar. Sprinkle on cake. Drizzle with the melted butter. Sprinkle nuts on top of whole (or half) of cake, depending on whether your family/friends all like nuts!
Bake for 35 – 40 minutes. Serve with tea/ coffee. This cake stands alone well, but also can be served with vanilla ice cream or whipped cream (sprinkled with a hint of rum).
Looks delicious!
